When I was younger, I had a real dislike for the little Italian potato dumplings, also known as gnocchi. I found them particularly slimy and the idea simply did not appeal to me, but I seem to have seen the light recently and now appreciate their delicate doughy texture, for what they truly are!
I whipped up this little salad the other week to take with me to work- it was quick to make and fuss-free, thanks to the little gems only taking 3 minutes to cook- perfect for when you want to meal prep. What’s in it?: Gnocchi, Basil pesto, Cherry tomatoes, Olives, Rocket & Pine nuts. The best combo of ingredients if you ask me!
