Whilst my version of Deliciously Ella’s Baked Apple and Cinnamon Porridge may not look the prettiest of dishes, it certainly tasted good and was the perfect warming breakfast for this cold and rainy Sunday morning! (Yes, at the end of May!). AND Ella herself liked it on Instagram, so I can’t complain!
I changed the recipe slightly and added almonds instead of pecans (as I didn’t have any in the cupboard), and also skipped over the raisins as I’m not the biggest fan in the world.
So here is what you need to make it:
200ml almond milk
300ml of boiling water
1 tbsp coconut oil
2 red apples
2 tsp cinnamon (I’d suggest reducing this and the ginger to 1 tsp as 2 made it very spicy, but obviously depends on how you like it!)
2 tsp ginger
Optional: 1 tbsp honey (I used Agave Nectar instead)
Pre-heat the oven to 200C
Place the oats in a bowl with the boiling water and let this sit for 10 minutes, until the oats are soft.
While the oats soak, peel the apples and chop them into small cubes. Once the oats are soft add these to the oat bowl along with the cinnamon, ginger, almond milk, coconut oil and honey/agave nectar. Stir everything together.
Transfer the mix into a small baking tray, then scatter the pecans/almonds across the top.
Bake the porridge for about 20 minutes, until the top is a golden brown and the apples are softer!
I topped my porridge with blueberries and added a splash more almond milk too- delish!
